Some foods, such as beans and grains, need to be cooked, fermented or sprouted to reduce lectin content. Some lectins are beneficial, such as CLEC11A, which promotes bone growth, while others may be powerful toxins such as ricin.[3]
today i had a "gastronomical event". i went to eat at Hare Krishna. There were beans that tasted good but the aftereffect was not that pleasant.

How long do you ferment your beans before cooking? hours or days? The best bean soup i ate was at a friend who forgot the beans fermenting in a fridge for 3-4 days.
